Lima Bean Salad

Personal Trainer Food Ingredients:
1 Lima Beans

Additional Ingredients:
Salt
Chili pepper, very finely minced
Onion, grated
Parsley, finely chopped
Olive oil
White wine vinegar

Instructions:

  1. Heat Lima Beans in the microwave. Once heated, remove from bag and place in a bowl.
  2. In a separate bowl, combine the salt, chili pepper, onion, parsley, olive oil and white wine vinegar. Stir until thoroughly mixed.
  3. Pour the the vinaigrette over the Lima Bean and stir until evenly coated.
  4. You can let the salad stand for a few hours or serve immediately. Enjoy!

    No quantities listed for the salad dressing. I have no idea, but I do know the oil to vinegar ratio is very important to taste, but what is it???

      Hi Neil,

      Great question! We left the recipe a little open ended as we know that many people have different preferences about the amount of vinegar and chili peppers they enjoy. However, we typically use about 2 parts oil to 1 part vinegar (so 1 tbsp vinegar for every 2 tbsp oil)–feel free to adjust to your taste as well!
